Kick A** Chili Soy Nuggets

Let the record state that you’ve been warned. Once you eat this dish you will want more and more and more.  My husband and kids love this as an appetizer or as a proper meal with rice.  Soy nuggets are extremely rich in protein.  If you are a vegetarian, they are a great substitute for meat.

  • dry soy nuggets                       3 cups (available at Indian grocery stores, under brand name Nutrela and other brands)
  • La Choy Soy sauce                 3 tbsp
  • Ketchup                                  2 tbsp
  • Water                                      2 tbsp
  • Red Onion chopped                1 – 1 and ½ cups
  • Cilantro chopped                    1/3 cup
  • garlic and ginger                     1 tbsp ( finely chopped 3 cloves garlic and ¼ inch ginger)
  • Green pepper                           1 tsp -1 tbsp, depending on personal preference
  • Green onion (optional)            ½ cup chopped
  • Red Chili paste, the kind offered in thai and Chinese restaurants, (according to taste bud immunity to peppers), according to taste

  1. Submerge the soy in hot water and hydrate for 15 minutes (Follow the directions on the package to prepare the soy).
  2. Squeeze the water out and soak in cold water.  Squeeze and soak in cold water. Repeat a few times to clean the soy.
  3. Place the squeezed soy in a colander and let it drain.  (You can place this in the fridge overnight if you like and work on it the next day).
  4. Deep fry the soy in a wok and keep aside on a paper towel to drain.
  5. Heat a wide non stick pan.  While it is warming up, pour in the soy sauce, squirt the ketchup, the red chili paste and add the water.
  6. Stir well.
  7. Once you see bubbles in the sauce, add in the fried soy nuggets and mix well to coat with the sauce.
  8. Let it cook till the soy absorbs the juices and flavors~ about 5 minutes. If it looks dry, sprinkle some more water.
  9. Sprinkle evenly the chopped onions, green onions, cilantro, ginger garlic paste and green chili pepper and give it a quick stir.  Cover for a few minutes before you serve as an appetizer or with rice.
  10. To serve with rice add ¼ cup water to the nuggets and reheat thoroughly before serving.
